FAQs

General Information:

What is sourdough and what makes it so special?

Sourdough is a time-honored bread crafted through slow fermentation using a natural starter—a living blend of wild yeast and beneficial bacteria that gives the bread its distinctive character. What sets sourdough apart is its rich, nuanced flavor with a pleasant tang, combined with a chewy crumb and crispy crust that develops through patient fermentation. The extended process naturally breaks down gluten and reduces phytic acid, making it gentler on digestion than mass-produced bread. Beyond the science, sourdough represents a connection to heritage baking traditions—each loaf reflects the baker's skill, local ingredients, and the unique microbial ecosystem of the kitchen, making every loaf a small work of edible art.

What is a cottage bakery and what can they sell?

The answer varies by state. According to Florida's Home Sweet Home Act, a cottage bakery is a home-based business that produces and sells low-risk, shelf-stable products. Florida permits the sale of loaf breads, rolls, biscuits, cakes, pastries, cookies, candies, confections, honey, jams, jellies, preserves, fruit pies, dried fruits, dry herbs, seasonings, homemade pasta, cereals, trail mixes, granola, coat/uncoated nuts, vinegar (including flavored vinegars), popcorn, and popcorn balls. No food permit is required from the Florida Department of Agriculture and Consumer Services; however, cottage food operators must properly package and label all foods, samples must be prepackaged, and we must comply with all state or federal tax laws, rules, regulations, or certificates.

What made you decide on the name "Doughpamine Bread"?

Doughpamine Bread is where mental health meets baking. In addition to running this cottage bakery, I am a licensed clinical social worker who has worked with children, adults, and families in a variety of settings. Dopamine is known as the "feel-good" hormone and plays a big part in your body's reward system; and for me, there are few things more rewarding than creating something that others enjoy.

Products:

What inclusions will you offer?

We will be offering a variety of inclusions, from dried seasonings/herbs to candies/chocolate to peanut butter and Nutella. Florida Cottage Food Law prohibits inclusions that are not considered shelf-stable, such as cheese and meats.

Cream cheese and butter are used in many frostings/icings, so what is the icing made of that's on the cinnamon rolls?

That's "Faux-rosting," which consists of confectionary sugar, maple syrup, vanilla, and salt. No cream cheese or butter involved but still rich, creamy, and delicious.

How long do your products last?

Due to our packaging process, our products last an average of 5-7 days. Each product comes with its own "Self-Care" card that provides instructions on how to store, refresh, and how long the product is good to freeze.

Preparation and Delivery:

How long does it take to make sourdough?

Typically, sourdough creations can take anywhere from 1 to 3 days to fully prepare, bake, and cool. To allow proper fermentation, provide the best spring and crumb, and ultimately taste, Doughpamine's creations take around 3 days to fully prepare, bake, cool, and then undergo a thorough packing process to ensure freshness.

How do you package your products?

To ensure our products remain fresh, each product is completely cooled, then wrapped in parchment paper and placed in a sealed bag (with silica gel packets to absorb any remaining moisture) before being boxed with packing paper for additional support. Once this is completed, your order will be shipped within 12 to 24 of the packaging process. We know, it's a lot, but it's all for you!

Once your package is entrusted to the shipping carrier, Doughpamine Bread relinquishes all responsibility for the package's condition upon arrival. We cannot be held accountable for lost, stolen, or damaged packages.

We are not responsible for delays in delivery due to disruptions in the USPS or UPS Parcel Service.

I won't lie. I'm struggling. Since you're a social worker, can you provide me with some guidance?
